Lemon Bars

Zesty Lemon Bars

These lemon bars feature a crisp shortbread base and a silky lemon filling.

Ingredients

Crust

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt

Filling

  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 4 large eggs
  • 2/3 cup fresh lemon juice
  • Zest of 2 lemons
  • Powdered sugar, for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9x13-inch pan with parchment.
  2. Beat butter and sugar until creamy. Mix in flour and salt until crumbly.
  3. Press crust into pan and bake 15–18 minutes, until lightly golden.
  4. Whisk sugar and flour. Add eggs, lemon juice, and zest; whisk until smooth.
  5. Pour filling over hot crust and bake 20–25 minutes, until set at the center.
  6. Cool completely. Dust with powdered sugar and cut into squares.
