Zesty Lemon Bars
These lemon bars feature a crisp shortbread base and a silky lemon filling.
Ingredients
Crust
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
Filling
- 1 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 4 large eggs
- 2/3 cup fresh lemon juice
- Zest of 2 lemons
- Powdered sugar, for dusting
Instructions
- Preheat oven to 350°F (175°C). Line a 9x13-inch pan with parchment.
- Beat butter and sugar until creamy. Mix in flour and salt until crumbly.
- Press crust into pan and bake 15–18 minutes, until lightly golden.
- Whisk sugar and flour. Add eggs, lemon juice, and zest; whisk until smooth.
- Pour filling over hot crust and bake 20–25 minutes, until set at the center.
- Cool completely. Dust with powdered sugar and cut into squares.
